How to Successfully Cook Fish on Your Gas Grill

Most folks that have been cooking on a weber gas grill for some time now probably know that grilling is most always done with the grill cover open. However, there are a few instances when you are going to want to close the grill cover while cooking. One such opening is when you are cooking delicate foods such as flounder or tilapia.

When you are grilling with the grill cover open you are using a cooking method known as conductive cooking. When you close the lid of the grill while cooking, you are now using the cooking method known as convective cooking. You are now incorporating the method of cooking used by your oven in the kitchen as opposed to the method used by your gas grill.

Now why use the same method of cooking as does your oven? Why not just use your oven you might ask? Short talk - it's nicer exterior when the weather is warm!

What we are doing by using our propane grill in this fashion is allowing us to introduce moisture into the cooking process. This moisture allows us to successfully cook those delicate foods such as the fish we mentioned above. The process works best if you have a multiple burner gas grill (at least two).

The method works like this. Do not light the burner over which your fish will be placed. Then after lighting the other burner, place a pan of liquid directly on the burner. This liquid can be be wine, chicken broth, shrimp stock., etc - any liquid that will add to the flavor of the fish while imparting moisture into the cooking process.

Now brush the down side of the fish with olive oil and place directly on the grate if cast iron or on a cast iron griddle if your grate is thin wire. You can also use aluminum foil.

Look for pinkish or clear moisture on the top of the fish to decide when to flip. Judge your fish's doneness the same way you would out of the oven - does your fish flake easily? Or use a thermometer to decide internal safe temperature.

Up until now you have probably avoided cooking fish on your gas grill. But we all know how wholesome fish can be. Now by following these uncomplicated tips, you are sure to be enjoying your fish hot off your gas grill this grilling season!
