appetizing Fish Potato Pepper Onion Bake

The method for this dish was inspired by a Greek fish and potato bake recipe. This is one of those recipes that is very easy to make. Once you do the preparing on the peppers, potatoes and onion, you can relax while this one dish meal bakes It takes about 45 minutes together with preparing time. The roasted peppers and onions give this dish an startling taste. This method is also salutary in that it uses low fat fish and olive oil in the place of butter. The fish used here is whiting but I have used flounder and sole for this dish.

Fish Potato Onion Pepper Bake

Flounder

Ingredients

2 fish fillets (whiting or similar)
the zest of one orange
1 teaspoon oregano
1 teaspoon salt
1/4 teaspoon black pepper
5 tablespoons olive oil
1 bell pepper, seeded and cut into 1/2" wide strips
1 large potato, peeled and sliced thin
1 large yellow onion, peeled and sliced thin

Instructions

1 - Preheat the oven to 425 degrees Fahrenheit.
2 - Add 3 tablespoons of olive oil to grease a 9X13 baking dish.
3 - Add potato, onion and bell pepper and mix well to coat with oil.
4 - Mix oregano, orange zest salt, and pepper.
5 - Sprinkle 1/2 of the composition on the vegetables.
6 - Bake for 25 minutes, stirring the vegetables halfway through the time
7 - take off and lay the fish skin side down on top of the vegetables.
8 - Sprinkle with the other half of the spice composition and the other 2 tablespoons of olive oil.
9 - Bake for another 7 minutes or until the fish flakes easily.

This dish could be accompanied by a tossed salad on the side, but it can stand alone as a salutary evening meal for two.
