Melt in Your Mouth Baked Flounder With Dill Breadcrumb Coating and Dill Cucumber Salad

Fresh dill has a great aroma, even in the organery where it's growing. As a flavor ingredient it is best known for development pickles. In the two recipes here it is used for a flavor adding coating material for baked flounder, and as a flavoring ingredient for a raw cucumber salad. The two dishes go together quite well. I can still taste the fresh dill flavor in my mouth as I write this article. This was served here for an evening meal.

Baked Flounder with Dill Breadcrumb Coating

Flounder

Ingredients

2 thawed flounder fillets (about 12 pound)
1 tablespoon of fresh dill weed (and seed), chopped
1 tsp lemon juice
1/2 cup mayonnaise
1 tablespoon butter
1 cup breadcrumbs

Instructions

1 - Rinse and dry the flounder fillets.
2 - Mix the fresh dill, mayonnaise and lemon juice together with a wisk until smooth.
3 - Melt the butter and mix with the breadcrumbs.
4 - Coat the flounder fillets on both sides with the mix made in step 2.
5 - Put the buttered breadcrumbs on a plate and coat both fillets on both sides.
6 - Place the fillets on the lowest of a greased baking dish.
7 - Bake in a 350 degree preheated oven for 15 minutes (or until fish flakes verily with a fork)

Lemon Dill Cucumber Salad

Ingredients

1/2 cup mayonnaise
1 tablespoon fresh dill, chopped fine
1 teaspoon lemon juice
1 large cucumber, chopped

Instructions

1 - Mix the first three ingredients together until uniform.
2 - Place chopped cucumber into a dish.
3 - Add the dressing from step 1 and toss
4 - Chill for an hour or more in the refrigerator, then serve.

Note - Although I made the easy raw cucumber salad without peeling the cucumber, the skin on the cucumber I used was a wee chewy so I would suggest peeling the cucumber before dicing.

1.Baked Stuffed Fish

Ingredients:

- White fish,enough for 4 - 6
- 2 c Soft bread cubes, about 1/2 cubes
- 1 Small onion, chopped fine
- 1 Green pepper, blanched and, Chopped
- 8 oz Imitation crabmeat
- 1/4 c Lemon juice
- 1/2 c Hellmans mayo
- Salt & pepper, To Taste

Directions:

- Mix all these ingredients together and roll up in fish fillets,
securing them with toothpicks.
- Divide it among four or five good-sized pieces. Bake at 400 for 30 minutes.
- while last 10 minutes pour newburg sauce over fish.
- It's good with flounder, but any white fish will do.
- I've used large cod and catfish fillets and butterflied them.
- Just sufficient so you can roll it up over the stuffing.

2. Best Peach Cobbler

Ingredients:

Filling

- 3 T Sugar
- 2 qt peach slices, Canned
- 4 t Baking powder
- 3/4 c Sugar
- 6 T Lard (or butter)
- 1/4 c Water
- 3/4 c milk cut half-, Canned
- 3 t Corn starch compel with water (just Topping sufficient to moisten dough)
- 2 c Flour

Directions:

Filling: Dissolve corn starch in water; add compound to peaches and juice in a large, warm Dutch oven; stir well; sprinkle sugar on top; cover and allow to simmer lightly while topping is prepared.

Topping: On a floured board, turn out a soft dough; pat down to 1/2" thick; cut into strips 1/2" wide and place criss-cross atop peach mixture; cover and cook approximately 20 minutes until golden brown.

Serve with Campfire Coffee. Serves approximately 18.

3. Biscuit And Pancake Mix

Ingredients:

- 9 c Flour, sifted
- 4 t Salt
- 1/3 c Baking powder
- 1 3/4 c Shortening, vegetable
- 1 c Milk, powdered

Directions:

- Chill shortening.
- Sift all dry ingredients.
- Cut shortening into flour till compound resembles coarse cornmeal.
- Store, well covered, in a cool, dry place.

Use for pancakes, biscuits, shortcake, cobblers or anything that you would make from a packaged biscuit mix. All you need is water.

For pancakes add 1 tb each sugar and powdered eggs to each cup of mix.

The journey is proving to be eye-opening.

How difficult it appeared for friends and colleagues to understand why I should make such a move. Comments like 'You will back in the city within 3 months'; 'What will you do with yourself' and 'But what exactly are you going to do?' were customary responses. Try as I might to explain the desire to attain a more integrated life rather than the juggling act linked with work/life balance, citizen were baffled as to what I was doing. However, this all changed when I replied 'I am taking a sabbatical'. Sighs of relief were heard from all quarters as citizen said 'Ah, that's what you are doing!' Suddenly I could be compartmentalised and therefore understood and linked to more unquestionably by others.

I now struggle with answering the question when new citizen I meet ask me what I am do. I flounder, wondering how one label could perhaps explain the enormity of internal changes that are taking place as I contemplate a more integrated life. 'Am I a psychologist, author, administration consultant - all areas in which I have worked - or someone on sabbatical?'

What does this example reveal? I believe it reveals something basic about the anxiety that arises when we are unable to pigeon-hole ourselves and other people. Over time we accumulate labels that define for ourselves and others who we are. Many of these are work-related and often we find that we are expending too much power in this sphere. So in finding to gain greater fulfilment, we often look for greater work/life balance. However, this troops us into greater disunion and fragmentation since its beginning point is 'work' on one side and 'life' on the other. However, whilst solutions to achieving harmony are offered straight through greater time administration and goal-setting strategies, these are red herrings in the work/life balance debate.
